This was one of the first recipes I’ve ever posted and it’s since had a bit of a facelift with some new pics and the addition of a Thermomix conversion. It’s an oldie, but it’s a goodie! It’s hard to describe these Chocolate Roughs – they’re kind of a cross between a cake and a cookie. They are so easy to make, the kids can make them, and as the ingredients list is a who’s who of pantry staples, you can whip them up at a moment’s notice! Now, is it time for tea?
Ingredients – Traditional
1/2 cup (125g) butter
1/2 cup (115g) caster sugar
1 egg
1 cup (150g) self-raising flour
2 heaped tablespoons cocoa powder
1 ½ cups (135g) desiccated coconut
How to – Traditional
- Preheat oven to 180 C/160C fan-forced. Line 2 baking trays with baking paper.
- Cream the butter and sugar then add the egg and beat well.
- Sift together the flour and the cocoa powder and fold into creamed mixture with the coconut.
- Place tablespoonfuls of mixture on the baking tray.
- Bake for 15 minutes. Allow to cool on trays for 5 minutes before transferring to cooling racks.
- Dust with icing sugar to serve.
Ingredients – Thermomix
125g butter
115g raw sugar
1 egg
150g self-raising flour
2 heaped tablespoons cocoa powder
135g desiccated coconut
How to – Thermomix
- Preheat oven to 180 C/160 C fan-forced. Line 2 baking trays with baking paper.
- Mill sugar for 5 seconds on speed 9.
- Add butter to TM bowl and chop for 5 seconds on speed 8.
- Insert butterfly and mix for 1 minute on speed 4. Remove the butterfly.
- Add egg and mix for 10 seconds on speed 3.
- Add flour, cocoa, and coconut. Mix for 10 seconds on speed 5. Scrape down lid and sides and repeat.
- Place tablespoonfuls of mixture on the baking tray. Bake for 15 minutes.
- Allow to cool on trays for 5 minutes before transferring to cooling racks.
- Dust with icing sugar to serve.
