It’s just like the good old days. At 5.55 (AM!) I queue round the block to get into the gym. The things I do for Tuesday pump! I love this class, it’s one of my favourites and it’s so good to be back. It really puts a spring in my step that lasts the whole day long!
Work is super busy. And it’s all go on the home front too. There just don’t seem to be enough hours in the day! Sometimes, I don’t know how I ever found the time to go to work! Heaven knows how I’ll fit everything in when I’m back working full time! I think I’m going to have to be a very creative time manager!
When I get home, I create total kitchen chaos with all manner of baking and making. First I try my hand at Nicky’s Birthday Sponge. I’ve been itching to give this a go, since I saw Nicky’s high-as-the-heavens-sponges at Josh’s birthday tea. It’s my friend’s birthday this week so I have a great excuse. It’s a super recipe because it’s fat free and the ingredients are so simple, plus it’s fine to freeze. Best of all, both my sponge cakes rise to Mount Everest proportions (or thereabouts!) I just have to hope they taste as good as they look.
Next up, is Old Fashioned Matzah Pudding: The Sequel which turns out even better than it’s predecessor. Everyone at work is looking a bit hungry so I’m sure they’ll appreciate it tomorrow! That’s if I don’t eat it first. It’s very hard to resist!
I’m on a roll, the kitchen is under destruction, so I continue to make a mess by rustling up a Sliced Tomato, Basil and Red Onion Salad. I think it takes me twice as long to clean up as it does to cook! The salad is the perfect partner for our Pea, Corn and Bacon Frittata dinner. Pea-licious!
