It’s no secret that I love me some muffins and these ones are no exception. Muffins are quick and easy to make and because they’re a neat individual serve, there’s no need to share. What can I say? I’m an only child and sharing doesn’t suit me! These muffins are berry delicious and I’ve updated the recipe with a Thermomix conversion! Let’s make some muffins!
Ingredients
2½ cups (375g) self-raising flour
¾ cup (165g) caster sugar
1 egg
1 teaspoon vanilla extract
2/3 cup (160ml) vegetable oil
¾ cup (180ml) buttermilk
200g frozen mixed berries (don’t thaw)
How to – Traditional
- Preheat the oven to 220C/180C fan-forced. Line a 12-hole muffin pan with paper cases.
- Place flour and sugar in a bowl.
- Place the egg, milk, oil and vanilla in a separate bowl and whisk to combine.
- Sift the dry ingredients into a large bowl, stir in the wet ingredients. Don’t over mix, remember a lumpy mixture makes the best muffins.
- Gently fold through the berries.
- Use an ice cream scoop to put the mixture into the muffin cases.
- Bake in the hot oven for 5 minutes.
- Reduce the temperature to 180C/160C fan-forced and cook for a further 15 minutes.
- Turn muffins onto wire rack to cool.
How to – Thermomix
- Preheat the oven to 220C/180C fan-forced. Line a 12-hole muffin pan with paper cases.
- Place the oil, egg, milk and vanilla in TM bowl and mix for 10 seconds on speed 5.
- Add the caster sugar and flour and mix for 5 seconds on speed 4.
- Add the berries and gently mix on reverse speed 2 for 10 seconds using the spatula to assist.
- Use an ice cream scoop to put the mixture into the muffin cases.
- Bake in the hot oven for 5 minutes.
- Reduce the temperature to 180C/160C fan-forced and cook for a further 15 minutes.
- Turn muffins onto wire rack to cool.
Prep and Cooking time: 30 minutes
TIP! Use a mixture of whatever berries, you have to hand. Don’t thaw the berries, use from frozen.
