I found this recipe on the back of a flour packet. In the olden days, I made this with my trusty food processor, but I’ve since updated it and whizzed up a Thermomix conversion. Whichever way you make it, it will be delicious! Go bananas!
Ingredients
- 185g unsalted butter, softened
- 1 cup (175g) brown sugar
- ½ cup (110g) caster sugar (or raw sugar, if using a Thermomix)
- 3 eggs
- 2 cups (300g) self-raising flour
- ½ teaspoon baking powder
- ½ teaspoon cinnamon
- 3 small bananas
How to – Traditional
- Preheat oven to 170ºC (fan forced). Lightly grease and line a 26cm x 15cm loaf tin with baking paper.
- Mash the bananas.
- Place butter, sugars and eggs in the bowl of a food processor and process until well combined.
- Add the flour, baking powder, cinnamon and bananas and process until smooth.
- Spoon into prepared tin and bake for about an hour and five minutes or until cooked when tested with a skewer.
How to – Thermomix
- Preheat oven to 170ºC (fan forced). Lightly grease and line a 26cm x 15cm loaf tin with baking paper.
- If using raw sugar, mill for 10 seconds on speed 9.
- Add the brown sugar and butter to the TM bowl and mix for 2o seconds on speed 4.
- With the blades running on speed 3, add the eggs one at a time through the hole in the lid. This should take about 30 seconds.
- Add the banana and mix for 5 seconds on speed 4.
- Add flour, cinnamon and baking powder and mix for 3o seconds on reverse speed 6. Scrape down sides and base of TM bowl half way through.
- Spoon into prepared tin and bake for about an hour and five minutes or until cooked when tested with a skewer.
