Life is full of regrets. But the good thing about exercise, is that you never regret it! I really want to run after work but I’m just not feeling it. I know if I don’t drag my lazy self outside, I’ll regret it, and if I do, I’ll love it. I’m super tired and am full of excuses but I refuse to snooze, or to lose!
Today what counts isn’t how slow, just that I go! I clock up another 5km, it’s hard and it hurts, but I’m happy. I’m so pleased I didn’t give up!
I reward myself with making some Pumpkin Passion Cupcakes and put my Bilpin pumpkin through it’s paces. The cupcakes are super-easy and freezer friendly. Cindy from Nutritionchic says that sugar is fine, if it’s helping you eat something good for you. The sugar accompanies the pumpkin nicely; eating one of them there cupcakes must surely be one serve of your 5-a-day!
Dinner is fast and flavoursome. We chuck some beef strips, chilli jam, stir fry veggies and noodles in the wok and produce Chilli Jam Beef Noodles. Chilli jam is such a champ and the real hero of this dinner dish.
David spots a sultana in the cupcakes and refuses to eat anymore. I’m not fussed if he eats them or not, because if they don’t take a one way ticket to his tummy, they can enjoy some longevity chilling out in the freezer. It’s a win, win situation for the cupcake. But not for David, he who has an aversion to dried fruit. I feel it’s churlish to make him miss out, so as there’s still stacks of pumpkin hanging around, I give those cupcakes another go. This time I leave out the sultanas and add in some white chocolate chips! Little beauties! Finally, the cupcakes get the taste testers seal of approval!
