This is a fine frittata – easy and versatile. It can be easily doubled to feed a crowd and eaten hot, warm or cold. It’s super served up as a speedy supper and equally perfect for a picnic!
Ingredients
100g ham, chopped into pieces
4 eggs
100ml milk
25g strong cheddar, plus extra for sprinkling, if you like
How to – Traditional
- Heat oven to 180C/160C fan-forced.
- Line a 20 x 20 square tin with baking paper – just scrunch it roughly at the corners.
- Grate the cheese. Set aside.
- Whisk together the eggs and milk in a large jug or bowl, then stir in the ham, the cheese and some seasoning.
- Pour into the tin, scatter with a bit of extra grated cheese, if you like, and bake for 30-35 minutes until golden and set.
- Serve hot, warm or cold, with bread, cherry tomatoes and a few salad leaves.
How to – Thermomix
- Heat oven to 180C/160C fan-forced
- Line a 20 x 20 square tin with baking paper – just scrunch it roughly at the corners.
- Grate the cheese in the TM bowl for 3 seconds on speed 8. Set aside.
- Add the milk and the egg to the TM bowl and mix for 3 seconds on speed 6.
- Add the ham and the cheese to the egg mixture and mix for 4 seconds on reverse speed 4, using the spatula to assist.
- Pour into the tin, scatter with a bit of extra grated cheese, if you like, and bake for 30-35 minutes until golden and set.
- Serve hot, warm or cold, with bread, cherry tomatoes and a few salad leaves.

Tip! To double the recipe, simply double the ingredients and bake in a roaasting tin, about 20 x 28cm. This frittata is a great addition to any picnic- just take it in it’s tin and enjoy it hot, warm or cold!
