It’s been so hot and humid here in sunny Sydney that we’ve been cooling down with some sensational sorbets. This is our favourite flavour. It’s really refreshing and tastes like Summer!
Ingredients
100-150g raw sugar
1 medium mango, flesh removed and roughly chopped
2 small oranges or 1 large orange, peeled and quartered
1 egg white (optional)
2 x 350g ice cubes (about 2 trays)
You need 300g fruit in total
How to
- Put sugar into TM bowl and mill for 10 seconds on speed 9.
- Add fruit and 350g ice (about 1 tray) and egg white, if using. Slowly turn the dial to speed 10. Add the rest of the ice after 20 seconds.
- Slowly turn the dial to speed 10. Use the spatula to help mix the fruit and the ice for about a minute.

TIP! It’s really important not to overload the thermie with all the ice at once. Remember to add the ice in 2 batches and process it gradually.
The sorbet freezes fabulously, but you may need to give it a bit of a blend to serve.
The egg white is optional, but use it if you can as it gives the sorbet volume and makes it all fluffy and smooth.
