It was love at first bite when I first tasted Donna Hay’s Lemon Yoghurt Cake . I loved it so much and not just because it was one of the first cakes I ever converted to the Thermomix. This all in one cake has turned into one of my all time favourites, and it’s easy peasy lemon squeezy whether you make it with or without a Thermomix.
Then one day when I had an excess of oranges, I upcycled them into this recipe and I am happy to report that this cake is awesome with orange. The yoghurt gives the cake it’s lusciously light texture and the zest and juice of the orange give it some value added tang. I tell you, this cake tastes as pretty as it looks, it’s a keeper.

Ingredients
180g vegetable oil
2 eggs
Zest of 1 orange
20g orange juice
280g thick natural yoghurt
280g raw sugar
300g self-raising flour
FOR THE ORANGE FROSTING
60g raw sugar
60g orange juice
How to – Traditional

- Preheat oven to 180°C /160C fan-forced. Liberally grease and lightly flour a bundt tin.
- Place the oil, eggs, rind, orange juice, yoghurt and sugar in a bowl and whisk to combine.
- Sift over the flour, and stir until smooth.
- Pour the mixture into prepared tin and bake for 35-40 minutes or until cooked when tested with a skewer.
- Allow the cake to cool for about 10-15 minutes and then remove from the tin and place on a plate.
- To make the orange frosting, gently stir together the sugar and orange juice.
- Spoon over the cake and allow to set. Serve warm.
How to – Thermomix

- Preheat oven to 180°C/160C fan-forced. Liberally grease and lightly flour a bundt tin.
- Place sugar and orange zest in the TM bowl and mill for 10 seconds on speed 9.
- Add remaining ingredients and mix on speed 4 for 10 seconds. Scrape down sides and base of bowl and mix again on speed 4 for 10 seconds.
- Pour mixture into a bundt tin and bake for 35 minutes.
- Allow the cake to cool for about 10-15 minutes and then remove from the tin and place on a plate.
- To make the orange frosting, gently stir together the sugar and orange juice.
- Spoon over the cake and allow to set. Serve warm.

TIP! For a beautiful bundt – make sure the bundt tin is really well-greased and lightly flour the tin before pouring the mixture in.
