Makes 24 small cupcakes
Gemma’s recipe is a cupcake cracker. These are perfect for the non-egg eaters in your life, but I must tell you, they’re all kinds of delicious whether you can eat eggs or you can’t! They’re easy to make and you get a perfect, deliciously moist (there, I said it!) cupcake every time whether you make them by hand or in your Thermomix!
Ingredients – Cupcakes
185 g butter
125 g raw sugar
2 tablespoon golden syrup
250 g milk
60 g cocoa
1 teaspoon baking powder
1 teaspoon bicarbonate of soda
185 g plain flour
Ingredients – Buttercream
250g butter, softened
320g pure icing sugar
50g cocoa
60g milk
Sprinkles, for decorating
How to – Traditional Cupcakes
- Preheat oven to 190 C/170 C fan-forced. Line 2 12-cup cupcake tins with papers.
- Place butter, sugar, golden syrup and milk in a pan and heat gently, stirring, until the butter is melted. Allow to cool slightly.
- Combine the flour, cocoa, baking powder and bicarbonate of soda in a bowl and add the wet mixture. Stir with a wooden spoon to combine.
- Spoon mixture into cupcake tin or cases and bake for 14-16 minutes.
- Remove from the oven and place the cupcakes on a wire rack to cool completely.
- Decorate with buttercream and candy. Love-ly!
How to – Traditional Buttercream
- Beat butter until pale and creamy.
- Add icing sugar, cocoa and milk and beat until fluffy.
- Spread or pipe buttercream on to cupcakes
How to – Thermomix Cupcakes
- Preheat oven to 190 C/170 C fan-forced. Line 2 12-cup cupcake tins with papers.
- Melt butter, sugar, golden syrup and milk for 4 minutes at 70C on speed 1. Check all the butter is melted.
- Add the flour, cocoa, baking powder and bicarbonate of soda and combine on speed 5 for 5 seconds. Scrape down sides of bowl and repeat if necessary.
- Spoon mixture into cupcake tin or cases and bake for 14-16 minutes.
- Remove from the oven and place the cupcakes on a wire rack to cool completely.
- Decorate with buttercream and candy. Love-ly!
How to – Thermomix Buttercream
- Place butter in TM bowl and mix for 5 seconds on speed 8. Insert butterfly and beat butter for 30 seconds on speed 4 until pale and creamy.
- Remove butterfly. Add icing sugar, cocoa and milk and mix for 15 seconds on speed 5. Scrape down lid, base and sides of bowl and mix for another 15 seconds on speed 5.
- Spread or pipe buttercream on to cupcakes.

TIP! You can also make this as one whole cake but make sure you cook it in a slower oven and for a longer time.
