These vegetarian sausage rolls taste so good, no one will miss the meat!

I contemplated calling these “I can’t believe they’re not meat” Sausage Rolls because that’s what everyone says when they devour them! They look like meat, they taste like meat but they’re not made of meat! In fact they’re so easy to make and so tasty to eat, that we actually prefer these to meat filled sausage rolls. They’re that good!

This is probably the one blog recipe I make most because not only are these rolls delicious, they’re perfect for a snack, go great in a lunchbox and make a delicious dinner. And if you’re a betting person, you can bet your last five dollars that if you ask me to bring a plate to a party of a barbecue, I’ll probably bring these!

Originally this was a Thermomix recipe but I’ve updated the recipe with some traditional instructions – you just need a blender or food processor or failing that, ninja chopping skills! These sausage rolls are super versatile too, if you so desire, you can add in some finely chopped veggies and if you want them nut free, swap out the walnuts and use pumpkin seeds instead. These are also freezer friendly, I like to freeze them cooked so I can just defrost and pop into a lunchbox but you can freeze them uncooked too and cook them fresh from frozen.

Ingredients

1 onion, halved

2 tablespoons fresh herbs (I like parsley)

100g walnuts

95g rolled oats

2 eggs (+1 extra for pastry, optional)

150g feta cheese

1 tablespoon soy sauce (or Tamari)

1/2 teaspoon Worcestershire sauce

45g fresh breadcrumbs (about 1 large slice of bread)

3 sheets puff pastry

Sesame seeds (optional)

How to – Traditional

  1. Preheat oven to 200C/180C fan-forced. Line 2 baking sheets with baking paper.
  2. Place oats and walnuts into a food processor blitz.
  3. Add chopped onion and herbs, eggs, cheese, soy sauce, worcestershire sauce and breadcrumbs and blitz to combine.
  4. Place mixture into a bowl and place in the fridge for about 10 minutes to firm up. Take pastry out of the freezer to defrost.
  5. Cut thawed pastry in half on workbench. Take out the filling mixture from the fridge. Divide into six equal portions. Place one portion of the mixture onto the long edge of the pastry and roll, cut into two equal portions (for large rolls) or four equal portions (for cocktail size.)
  6. Place the rolls on the baking sheet and brush with milk/egg and sprinkle with sesame seeds, if you like. Bake for about 20 minutes until crisp and golden.

How to – Thermomix

  3. Add walnuts, oats and chop for 3 seconds  on speed 6. Scrape down.
  4. Add eggs, cheese, soy sauce, worcestershire sauce and breadcrumbs and mix to combine for 20 seconds on speed 5.
  5. Place mixture into a bowl and place in the fridge for about 10 minutes to firm up. Take pastry out of the freezer to defrost.
  6. Cut thawed pastry in half on workbench. Take out the filling mixture from the fridge. Divide into six equal portions. Place one portion of the mixture onto the long edge of the pastry and roll, cut into two equal portions (for large  rolls) or four equal portions (for cocktail size.)

TIP! You can experiment with the cheese if you don’t have feta to hand. I’ve used a half feta/half cheddar combo which worked really well.

Make the breadcrumbs in the Thermomix. I use frozen bread, break it into chunks and blitz for about 10 seconds on speed 8.

TO FREEZE: At step 6, place cut rolls on a little tray lined with baking paper, and when they’re hard, pop them into a freezer bag. Then stash them in the freezer and you’re ready to roll!  Just pop them into the oven from frozen for about 20 minutes at 200C/180C fan-forced. You can also freeze the cooked sausage rolls, which are just as delicious eaten cold as they are warm!
