Orange and Sultana cake

Serves 6-8 generously

When life gives me lemons, I make lemon cake and when life (or my lovely neighbour) gives me oranges, there will be no prizes for guessing how I’m going to use them!

This cake is a real box ticker.  Just like it’s sister cake, the 30 second whole orange cake this cake is fast, fabulous and super fruity, especially as it’s pimped up with sultanas.  I’ve made this cake a trillion times (or thereabouts) and it’s always a crowd pleaser. I love the dense spongy fruitiness and using the whole orange gives it such a glorious colour.

It keeps well  too, up to a week in an airtight container and freezes fabulously. Orangey-boom!

Orange and Sultana Cake

Ingredients

1 orange, organic

1 teaspoon bicarbonate of soda

1/2 cup water

125g butter, softened

210g raw sugar

2 eggs

1 teaspoon vanilla extract

260g  plain flour

130g sultanas

How to – Traditional

  1. Heat oven to 160C/fan 140C. Grease and line the base of  a deep 20cm cake tin with baking paper.
  2. Wash orange well. Remove the nobbly ends of the orange, remove the seeds and cut the unpeeled orange into 4.
  3. Blitz the orange in a food processor until finely chopped.
  4. Dissolve the bicarb in the 1/2 cup water.
  5. Add the bicarb mixture, sugar, eggs, flour and vanilla extract  to the processor and whizz to mix
  6. Add the sultanas and either stir through with a spoon or pulse a couple of times.
  7. Pour  the mixture into the prepared tin and bake for about 45-50 minutes, or until a cake tester comes out clean.

How to – Thermomix

  1. Heat oven to 160C/fan 140C. Grease and line the base of  a deep 20cm cake tin with baking paper.
  2. Wash orange well. Remove the nobbly ends of the orange, remove the seeds and cut the unpeeled orange into 4.
  3. Blitz orange quarters and butter for 7 seconds on speed 8.
  4. Dissolve the bicarb in the 1/2 cup water.
  5. Add the bicarb mixture, sugar, eggs, flour and vanilla extract  to TM bowl and mix on speed 4  for  10 seconds.
  6. Scrape down the mixture and add the sultanas. Mix for  10 seconds on speed 4, using the spatula to assist if necessary.
  7. Using the spatula, put  the mixture into the prepared tin and bake for about 45-50 minutes, or until a cake tester comes out clean.
