I haven’t made Brownies for some time, not since the oh-so-yummy Snickers Brownies. I often lie awake at night and think what could be more delicious than a Snickers Brownie but I never quite find the answer. It’s quite the conundrum.
However, I’m pleased to report I found the answer almost by accident last week when I was at the supermarket and Twixes (is that really the plural of Twix?) were on special. Can you imagine that chocolate, that shortbread and that oozy caramel sandwiched inbetween layers of Brownie? Can you? Well, I can.
Imagination aside, the proof is in the eating and let me tell you, the eating is mighty fine. Twix-tastic, in fact!
Ingredients
200g caster sugar
150g butter
75g cocoa
1 teaspoon vanilla extract
3 eggs
75g plain flour
3 Twix bars
How to – Traditional
- Preheat oven to 180C/160C fan-forced. Grease a 20cm square tin and line with baking paper.
- Place the butter, sugar and cocoa in a small pan. Melt over a low heat, stirring continuously.
- Place the melted mixture in a large mixing bowl and allow to cool slightly. Add the eggs and vanilla and mix well.
- Fold in the flour.
- Spoon half the mixture into the tin and carefully place the Twix fingers on top. Don’t be too precious about the pattern. They’ll taste delicious whatever way you do it!
- Add the remaining mixture to cover.
- Bake for 20 – 25minutes or until centre is just set.
- Cool in tin and cut into squares.
- Devour!
How to – Thermomix
- Preheat oven to 180C/160C fan-forced, Grease a 20cm square tin and line with baking paper.
- Add the sugar, butter and cocoa into the TM bowl and melt for 5 minutes on speed 2 at 60 degrees. Check that the mixture is melted.
- Add the eggs and vanilla and mix for 10 seconds on speed 4.
- Add the flour and mix for 10 seconds on speed 4. Scrape down the sides and base of the bowl and mix for a further 5 seconds on speed 4
- Spoon half the mixture into the tin and carefully place the Twix fingers on top. Don’t be too precious about the pattern. They’ll taste delicious whatever way you do it!
- Add the remaining mixture to cover.
- Bake for 20 – 25minutes or until centre is just set.
- Cool in tin and cut into squares.
