Serves 2 as a main or 4 as a side
This is the easiest salad in the world. Probably. I love that with a few simple ingredients, almost zero chopping and a quick toss, you can magic this salad up in minutes! We find this so full of flavour that it doesn’t even need dressing, although if you like a quick squeeze of lemon juice might tickle your fancy. It’s delicious on it’s own and makes a sensational side, especially with fish. Get it in your belly!
Ingredients
420g lentils, rinsed and drained
50g baby spinach leaves, roughly chopped
50g semi-dried tomatoes, drained
50g pitted kalamata olives
1/2 small red onion, thinly sliced
How to:
- Toss onion, tomato, olives and lentils in a bowl.
- Add spinach and toss to combine.
- Season well and serve.

TIP! If you don’t fancy spinach, kale would taste great instead.
