Serves 10-12
This is probably the easiest and one of the yummiest cakes I’ve ever made and that’s saying something because I’ve made a lot of cakes.
Ingredients
310g caster sugar (use can use raw sugar if you’re using a Thermomix)
3 eggs
1 teaspoon vanilla essence
390g self-raising flour
140g olive oil (not virgin and not fancy)
210g natural yoghurt
2 tablespoons milk
100g chocolate chips (I like to use a mix of white, milk and dark)
How to: Traditional
1. Preheat oven to 180C / 160C fan-forced. Grease and line base of a deep round cake tin.
2. Mix together all the ingredients and pour into tin.
3. Bake for 50 minutes or until a cake tester comes out clean when inserted into the centre of the cake.
4. Leave the cake in the tin for 10 minutes before transferring to a wire rack to cool.
How to: Thermomix
1. Preheat oven to 180C / 160C fan-forced. Grease and line base of a deep round cake tin.
2. If using raw sugar, mill for 10 seconds on speed 9.
3. Add everything but the chocolate chips to the TM bowl. Mix for 10 seconds on speed 5. Scrape bottom and sides of bowl and mix for another 10 seconds on speed 5.
4. Add the chocolate chips to the mixture and mix for 15 seconds on reverse speed 3 using the spatula to assist.
5. Using a spatula, transfer the mixture into the prepared tin and smooth the top.
6. Bake for 50 minutes or until a cake tester comes out clean when inserted into the centre of the cake.
7. Leave the cake in the tin for 10 minutes before transferring to a wire rack to cool.
TIP
If you have a 3/4 cup measuring cup, you won’t even need to use your scale. Using 3/4 cup as a measure, add 1 yoghurt, 1 oil, 2 sugar and 3 flour, it’s that easy!
The cake is very sweet, especially with the chocolate chips, so feel free to reduce the sugar if you fancy.
