With a hint of orange and the crunch of nuts, these flapjacks are a totally tasty treat.
I am a bit obsessed with marmalade. I think it’s in my genes. My nana used to love marmalade, in fact, I think she’d give Paddington a run for his money in the marmalade loving department. I love baking with marmalade so much, I think nana would be proud! It was the end of term at school the other day and as it was about 40 degrees outside the students voted for a movie in class rather than a picnic outside. They so wise! I wanted to show them the movie Paddington because a) it’s my favourite and b) even if you’re English isn’t up to scratch, it’s so visual, it’s easy to understand what’s going on. I took some popcorn but really I should have taken marmalade sandwiches because none of them had ever tasted marmalade! Can you believe?!
Every time I watch Paddington, I want to eat marmalade and then of course, I want to bake with it too. These flapjacks were the results of my latest Paddington viewing and really, I think he would approve. They’re super cheap and super easy to make and so moreish, it’s almost impossible to stop at one square.
The orange flavour is super subtle while the crunch of the walnuts make a great contrast to the chewiness of the flapjack. These are so cheap, so easy and they will keep in an airtight container for up to a week. I bet Paddington would want to sneak a few into his suitcase!

Ingredients
250g butter
3 generous tablespoons of marmalade
125g brown sugar
175g golden syrup
425g rolled oats
100g walnuts, roughly chopped
zest of 1 orange
How to – Traditional
- Preheat oven to 180C. Lightly grease a 33.5cm x 23.5cm lamington pan and line the base and long sides with baking paper. Extend the paper 5cm over sides to make handles.
- Melt butter, sugar, syrup and marmalade over a medium heat, stirring all the time.
- Take off the heat and add oats, walnuts and zest – the mixture will be quite soft.
- Tip the mixture into prepared pan and level with a spoon. Bake for about 30 minutes until the edge is golden but the centre is still a little bit soft.
- Remove from the oven and mark into 20 squares while it is still warm, cutting down half way with a sharp knife. Allow to cool in the tin.
- Cut in to squares to serve.
How to – Thermomix
- Preheat oven to 180C. Lightly grease a 33.5cm x 23.5cm lamington pan and line the base and long sides with baking paper. Extend the paper 5cm over sides to make handles.
- Place butter, sugar, syrup and marmalade in TM bowl and melt for 90 degrees on speed 2 or until completely melted.
- Add oats, walnuts and zest and mix for 5 seconds on reverse speed 3. Set the dial to the closed lid position and mix for a further 30 seconds on interval speed – the mixture will be quite soft.
- Tip the mixture into prepared pan and level with a spoon. Bake for about 30 minutes until the edge is golden but the centre is still a little bit soft.
- Remove from the oven and mark into 20 squares while it is still warm, cutting down half way with a sharp knife. Allow to cool in the tin.
- Cut in to squares to serve.
