Run, don’t walk for this irresistible Caramilk Rocky Road loaded with crunchy Maltesers and chewy caramels.
This is my new favourite addition to my every growing list of rocky road recipes. Not that I’m obsessed or anything. Truth be told, I’ve been wanting to have a crack at some Rocky Road ever since I shared my Really Raspberry Rocky Road recipe on my Facebook page asking everyone’s favourite Rocky Road ingredient and Leah mentioned Rice Bubbles. Thanks Leah, it’s a genius addition!
I’m a bit of a survivalist/tight ass when it comes to my favourite chocolate bars and when they are on special, I stock up as if an apocalypse is coming. Obviously I shouldn’t joke about the apocalypse because after this year’s bush fires and the current pandemic, it’s been just like living in an apocalypse.
When it comes to sad or bad news, I tend to wear my emotional raincoat, stick my head in the sand and then bake or in this case, make my feelings. So with my heavy heart, I turned to my apocalyptic stash of chocolate, got myself some rice bubbles, upcycled some left over fudge and away I went. Of course, after I made my feelings, I ate them and I must warn you that this rocky road is totally irresistible!
Now I know that Caramilk isn’t everyone’s cup of tea but don’t worry too much because even if you make this with white or even milk chocolate, it will still be scrum-diddly-umptious. Just don’t expect to be able to stop at one piece, ‘kay?! And don’t say I didn’t warn you!

Ingredients
100g Maltesers
200g Jersey Caramels or fudge, roughly chopped
100g mini marshmallows
1 cup (30g) rice bubbles
400g Caramilk chocolate
25g coconut oil
How to – Traditional

- Lightly grease a slice pan. Line the base and long sides with baking paper, extending the paper over the sides.
- Combine maltesers, caramels, marshmallows and rice bubbles in a large bowl and set aside.
- Melt the Caramilk and coconut oil in the microwave in 30 second bursts until completely melted.
- Add the Caramilk to the malteser mixture making sure everything is well covered in chocolate.
- Spread mixture into the pan, smooth surface and put in the fridge for 2 hours or until firm.
- Cut into squares.
How to – Thermomix

- Lightly grease a slice pan. Line the base and long sides with baking paper, extending the paper over the sides.
- Mix maltesers,aramels, marshmallows and rice bubbles in a large bowl and set aside.
- Place Caramilk and coconut oil in TM bowl and blitz for 10 seconds on speed 9.
- Scrape down and melt 5 minutes 50 degrees speed 1.
- Scrape down and melt for a further 2 minutes at 50 degrees on speed 1.
- With blades moving on reverse speed 1, gradually add the lollies through the hole in the lid until they are all coated in chocolate this should take about 45 seconds.
- Spread mixture into the pan, smooth surface and put in the fridge for 2 hours or until firm. Cut into squares.
- Make a Caramilk drink by adding a cup of milk and blitzing 5 seconds on speed 8. Then heat milk 5 minutes 80 degrees speed 4.
