In My Kitchen – January 2025

January was a month of the blink and you’ll miss it variety – it went by so quick! And now I find myself here on the first day of the second month and I’m keen as mustard to join up with Sherry and friends for the latest edition of In My Kitchen.

My first recipe of the year was this All-in-One Bakewell Cake my take in cake form of a Bakewell Tart. As it’s an all in one cake, you can literally make the batter in a couple of minutes. I love that it’s so easy to put together. It’s seriously yum!

I made a lot of chutney and relishes this month – my cauliflower relish and eggplant chutney but I don’t have any to show… It’s been flying off my kitchen shelf into the kitchens of friends and neighbours!

My spice rack continues to grow from strength to strength. I invested in a silver pen so I could label them more neatly and this collection of jars brings me a ridiculous amount of joy. Can you see anything I’m missing?

I got a few cookbooks for Christmas – including this Mob One from my mother-in-law. It’s full of tasty one pot/tray recipes.

The first recipe I made from it was this Spicy Chickpea Pie. We really enjoyed it. Side note: I can’t wait for the lighter evenings to roll around if for no other reasons, than I can take better dinner pics!

I was totally influenced by @littlenorfolkcottage who raved about her Our Place pan so much that I decided to get one for myself in the new year sale. It’s not just a pretty pan – it’s also toxin free, non stick and oven safe. It’s super versatile because it braises, sears, steams, strains, sautes, fries, boils, and bakes. Highly recommend!

I had some leftover clotted cream in the fridge which I would normally slather on some scones but I decided to bake a cake with it instead. The clotted cream replaces the butter in the recipe and resulted in a deliciously light and marvellously moreish bake. I’ll have to post the recipe soon!

Our neighbours came round for a curry night and I made four curries and was so enjoying the moment that I didn’t even get a photo! I did take a pic of the Choc Chip Bread Pudding that I made for dessert though. This is such a great way to use up stale bread and a twist on my nana’s special recipe!

I asked Santa for this book for Christmas even though I don’t have a slow cooker – although my Ninja does have a slow cooker function. It’s got some really simple but tasty recipes each with just six ingredients.

After lamenting about my lack of slow cooking equipment, my neighbour kindly lent me the one she had and had never used. It’s the smallest slow cooker I’ve ever seen but it does the job. I was very pleased with the Cheesy Jalapeno Mince that I made from my new book.

Our neighbours told us about a Polish supermarket which is not exactly local but the nearest one to our little town. We finally got to check it out this month and it was really a sight to behold. We did not leave empty handed and came home with some pickles and pierogi (all the P’s!) We got some frozen and fresh pierogi to try and can vouch that these fresh ones were delish!

I know I shouldn’t wish my life away but I can’t wait for lighter evenings when I can take decent (or at least better) dinner pictures!
